You guys may be wondering what in the world I am doing with all the blueberries I picked the other day. Well, I’ve made blueberry muffins and smoothies so far AND blueberry syrup.
This syrup is so easy to make and so delicious! Cobalt and I poured it over homemade wheat, cinnamon waffles for a healthy breakfast.
Fluffy Waffles + Blueberry Syrup

INGREDIENTS
Waffles
- 3/4 cup all purpose flour (can sub half with whole wheat)
- 1/4 cup cornstarch
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 cup whole milk or buttermilk
- 1/3 cup vegetable or canola oil
- 1 egg
- 1 TBS sugar
- 1 tsp vanilla extract
Blueberry Syrup
- 3 cups blueberries (fresh or frozen)
- 1 cup water
- ½ cup sugar
- 1½ tablespoons cornstarch dissolved into 3 tablespoons water
- ½ teaspoon vanilla
DIRECTIONS
Start with blueberry syrup
- In a saucepan, add 1 1/2 cups of the blueberries, water and sugar. Bring to a boil, stirring occasionally.
- Once berries have softened and broken add the cornstarch mixture, stirring after addition.
- Cook berries until desired thickness, at least 3 minutes.
- Before serving, fold in remaining blueberries.
- Serve over food of your choice (yogurt, waffles/pancakes, crackers etc.)
Then make waffles
- In a medium bowl whisk dry ingredients. Add wet ingredients, mixing well. Let batter sit 30 minutes.
- Preheat waffle iron but do not grease it. Pour 1 cup of batter in iron and follow directions to your waffle iron to cook the waffles.
- Serve with blueberry syrup!
Notes
- Waffle recipes makes 3-4 waffles. Can definitely be doubled or tripled!
- Blueberry syrup recipe serves 4-6 people.
