10 Minute Granola

I always thought making granola with the oven method was sort of a hassle and messy. But then I found this recipe, written below. The method introduced here is so easy that I’ve put making granola back onto my “regular things to make & bake” list!!

10 Minute Granola
Always thought making granola was a hassle? No need to worry anymore. This is an easy no-mess recipe, perfect for impatient cooks ;)

Ingredients
  1. 4 TBS oil
  2. 4 cups oats
  3. 1/3 cup butter
  4. 2 TBS honey
  5. 1/3 cup brown sugar (omit if you don't like sweet granola)
  6. 1/2 tsp vanilla
  7. cinnamon  - however much you want :)
  8. (optional)  nuts
  9. (optional) dried fruit
Instructions
  1. Heat oil in a large saucepan.
  2. Add oats, cook and stir until they start to brown/crisp, about 5 minutes (they'll start to smell like popcorn). Pour onto a cookie sheet until step 4.
  3. Melt butter in the pan with honey, brown sugar, vanilla and cinnamon.
  4. Return oats to pan and stir for another 5 minutes until well combined. Pour onto cookie sheet to cool. Once cooled, fold in dried fruit and chopped nuts, if desired.
Notes
  1. Store in an airtight container in a cool place for up to 2 weeks. (If your house is hot like mine, store it in your fridge; will last a month.)
  2. Enjoy with chopped fresh fruit, applesauce, yogurt, milk....anyway you like!
  3. Yields 4-5 cups.
