I’ve been wanting to try black bean brownies for a while. So many recipes have popped up on Pinterest – it’s much more popular than I realized! So today I concurred my fear of beans in my favorite dessert. I was seriously amazed by the tasty result!
- Butter or cooking spray for greasing pan
- 3/4 cup cooked black beans
- 1/2 cup vegetable oil
- 2 eggs
- 1/4 cup unsweetened cocoa powder
- 2/3 cup brown sugar
- 1 teaspoon instant coffee or espresso
- 1 teaspoon vanilla extract
- 1/3 cup flour + 1/3 cup of old-fashioned oatmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- Preheat the oven to 350 degrees F. Grease a 9x9 square baking pan.
- In a food processor, purée the beans with the oil. Add the eggs, water, cocoa, sugar, coffee, and vanilla (do this in intervals if you have a smaller processor like I do). Blend until smooth.
- In a small bowl, whisk together the flour, baking powder, and salt. Add to the food processor and pulse until just incorporated. Either fold in the chocolate chips now in a separate bowl or wait until the next step.
- Pour brownie batter into the prepared pan. If you saved your chocolate chips, sprinkle them on top of the brownies and press them down slightly. Then bake until the batter pulls away from the edges and is still a bit shiny in the middle, about 20 minutes.
- Let cool 5-10 minutes before serving. Tasty with ice-cream or a glass of milk!
By the looks of it, I bet you’d never guess there were beans in these brownies!
Analysis
I liked these brownies a lot! They were filling from the extra protein boost and didn’t give me a sugar high like boxed brownies tend to (yet I eat them anyway :P). I was sadly missing chocolate chips in my brownies (I wrote them in the recipe for your benefit) along with eggs (I used flaxseed instead) so there was a certain richness that needed to be compensated with more sugar instead of genuine flavor.
Regardless, I definitely recommend these! Especially if you are trying a lower fat diet, the beans are a fat substitute. And for even more healthiness, you could replace another 1/4 cup of the oil with applesauce or another type of puréed fruit like dates or prunes!
