Around Christmas, Kathy Patalsky posted a recipe for Pumpkin Cranberry Loaf on her blog. Having leftover pumpkin from a recipe, I endeavored to give hers a try. I didn’t make it vegan, and I reduced the sugar and used apple butter instead of oil…but it was pretty delicious!! Cobalt and I toasted the bread and dusted powder sugar and/or spooned apple butter on top. Next time I’ll add more sugar and cook it longer, as it was a little too moist.
