Pumpkin EggNog Pancakes

Today, I had leftover canned pumpkin from pumpkin bagels I made the other day, so I made this recipe for my hubby who has been requesting for pancakes!

These pumpkin eggnog pancakes were really fluffy and flavorful! (The pumpkin was a fabulous addition to normal pancake mix.) Also, they were SUPER easy to make. Took me maybe 45 minutes to finish cooking all of them, but only 15 minutes to mix everything together.

Ingredients
  1. 1 cup milk
  2. 1/2 cup eggnog
  3. 1 cup pumpkin puree
  4. 1 egg
  5. 2 TBS vegetable oil
  6. 2 TBS vinegar
  7. 2 cups whole wheat flour
  8. 3 TBS brown sugar
  9. 2 tsp baking powder
  10. 1 tsp baking soda
  11. 1 tsp ground allspice
  12. 1 tsp ground cinnamon
  13. 1/2 tsp ground ginger
  14. 1/2 tsp salt
Instructions
  1. In a small bowl, mix together the milk, pumpkin, egg, oil and vinegar.
  2. In a medium bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt. Stir into the pumpkin mixture just enough to combine.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle (a 1/4 cup measure works perfectly!). Brown on both sides.
  4. Serve hot!! :)
