I love Aldi.
Never have I been able to buy $30 worth of groceries while getting so much food (1-2 weeks for Cobalt and I, depending on the week). Back in Johnson City, Kroger was the only grocery store that consistently had good deals. But pineapple for $.99? Seriously? And a 10-lbs bag of potatoes for $3? I wonder why people are still shopping at Publix and “More-For-Less” stores (Bi-Lo, Save A Lot, Big-And-Large. . .). But I suppose location and convenience influence that shopping choice. And I do realize that Aldi is not on every street corner as is Walmart. And yes, you do have to bring your own bags to Aldi and put the cart back where you found it (make sure to bring a quarter so you can unlock the cart! Don’t worry, you get it back when you return it.). But honestly, that’s worth it to me because a “penny saved is a penny earned” (qtd. from my father, David S. Winkler).
Speaking of Aldi, I bought whole oats there a few weeks ago (less than $2 for a cylinder box) and a couple of bags of trail mix ($1.99 for a little more than 2-cups a bag…the cheapest bag there). Cobalt and I have been wanting to eat granola ever since we realized how expensive cereal is. So after obtaining these ingredients, I came up with a recipe:
- 4 cups whole oats (not quick oats)
- 1 cup toasted oats or squares cereal
- 2 cups trail mix, or any nuts of your choice (try not to use salted like I did on accident...but if you do, add a couple TBS of brown sugar)
- 2 TBS flaxseeds
- 2 tsp. cinnamon
- 2 tsp. vanilla extract
- 2/3 cup vegetable oil
- 1/3 cup molasses
- Preheat oven to 250 degrees. Grease a jelly roll pan.
- In a medium/large bowl, mix oats, cereal, trail mix, flaxseed meal and cinnamon together. Add vanilla, oil and molasses. Mix well.
- Pour mixture onto a jelly roll pan (cookie sheet with 1/2-inch sides) or some sort of long pan with sides so the granola can cook evenly.
- Bake on top rack of oven for 15-20 minutes.
- Take out pan and gently stir granola with a spatula.
- Turn up heat to 350 degrees and bake 10 more minutes or until oatmeal looks golden-colored.
- Set pan on hot pads or cooling rack and let granola cool completely. Note: granola will become crunchy as it cools.
Serve with apple sauce (quick dessert), milk, yogurt, bananas and peanut butter, fruit smoothie, a fruit parfait…however you like!

It IS pretty yummy! Just need to remember not to use salted nuts next time, as it’s a little on the salty side!
LOVE the trail mix idea! Good job! I’ve been meaning to make granola for us, too. You know how Dad loves it! Aldi makes eating well affordable. Great post.
