Marshmallow Granola Bars

Hands down, these are the best granola bars I've ever made. I was thoroughly impressed with how easy they were to make; and also that the ingredients melted in my mouth so perfectly. I liked the way I modified the recipe with honey, old fashioned oats, flaxseeds and nuts!

Ingredients (some are modified)
- 1 package marshmallows
- 1/4 cup honey, instead of corn syrup (maple syrup would have been good, too)
- 1 cup peanut butter
- 1/2 stick butter (1/4 cup), instead of 1 stick (1/2 cup)
- 1 cup old fashioned oats, instead of quick cooking
- 2 handfuls of craisins, peanuts, chocolate chip crumbles
- 1 TBS flaxseeds
- 1 TBS cinnamon
- 2 tsp vanilla extract
Instructions
- Melt first 4 ingredients in microwave safe bowl for 1-minute increments on 50% power, mixing each time.
- Add rest of ingredients, mixing well.
- Pour into a 9x9 greased pan.
- Bake 350°F for 20 minutes, until firm to the touch. Let cool before slicing.
