Cobalt’s Birthday Pie

Cherry pie is my husband’s absolute favorite. But when I was making it for this birthday last week, I realized I only had ONE can of cherry pie filling. Unfortunately, I didn’t have any time or money to buy another can…so what was I to do?

Ah! Use what was in my fridge!

One orange, peeled and chopped into small cubes and nearly a cup of fresh pineapple (also cubed) was a perfect addition to the can of cherry pie filling. Plus, it helped me use up what was in my refrigerator.

After mixing all the fruit together in a bowl with some cinnamon, I poured the filling into a pie crust, and added the rest of the crust on top.

I was afraid I had ruined it, but surprisingly this pie was very delicious!
So all this to say, don’t be afraid to substitute in your kitchen. Often, you’ll discover flavors you never thought could be created when adding certain ingredients together!
